Inspired by the cultural diversity of Brooklyn, The Norm’s menu by Michelin-starred Chef Saul Bolton encourages a gastronomic exploration of the borough’s multi-cultural heritage, incorporating Indian, Mexican, Japanese, Middle Eastern, Caribbean, Indo-Chinese and all-American elements. That exploration is complemented by a setting which evokes on of the museum’s inner sanctum, its storage area where priceless works await their star turn in the galleries.

Saul Bolton

Chef Saul Bolton is Great Performances’ executive chef of The Norm and the cafe at Brooklyn Museum. Having worked with such James Beard Award-winning chefs as Gordon Hamersley, David Bouley and Eric Ripert, Chef Saul and his wife opened the eponymous Saul in Boerum Hill, Brooklyn in 1999. The restaurant earned a prestigious Michelin star (one of the first two Brooklyn establishments to be so honored). In 2010, Chef Saul added The Vanderbilt to his portfolio and then Red Gravy in 2013. He also owns Brooklyn Bangers, an artisanal sausage company, which he started in 2011.
